Banana Cake

Unfortunately due to a technical hitch we don't have an oven at home at the moment which has typically given me cravings for the best banana loaf in the world! Here is the recipe...

Try making some and tasting it and then let me know what you think. I f you serve it with some old fashioned, Cornish vanilla ice cream you just can't go wrong.

  • 75g melted butter
  • 250g self-raising flour
  • 1 tsp baking powder
  • 1/2 tsp bicarbonate of soda
  • pinch of salt
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmug
  • 115g caster sugar
  • 1 tsp vanilla extract
  • 2-4 large very ripe bananas (the squishier the better!) 
  • 125ml milk
  • 2 medium eggs
  • 100g Chocolate chips (optional)
  1. Heat the oven to 190C/375F/Gas 5. Melt the butter and allow to cool. Mash the bananas well. Sift the flour, baking powder, bicarbonate of soda, salt, cinnamon and nutmeg together in a large bowl, add caster sugar and stir through.
  2. With a fork, beat together the eggs, vanilla extract, melted butter and milk in a second bowl. Add the mashed banana and stir through.
  3. Make a well in the centre of the dry ingredients and add the egg mixture, stirring roughly with a fork (don't over mix) until it is a lumpy paste.
  4. Grease a loaf tin putting a rectangular shaped piece of greaseproof paper at the bottom and spoon the mixture in.
  5. Bake for 45 minutes to an hour or until the loaf is completely cooked throughout (test by putting a cake tester into the centre and making sure it comes out clean) and then remove from tin and place on a cooling rack.
  6. Serve with sliced banana and a dollop of creme fraiche or a tasty scoop of vanilla ice cream and some melted chocolate drizzled over the top.


    I really can't wait until we get our oven fixed and I can make some more... then I will show you some of the pictures to get your mouths really watering :)

    The bag isn't bad, it's cute, but I think that for such money you can find more beautiful one;)
